Since 2006, the Quiot family, charmed by the Dentelles de Montmirail and its products of character, has owned the Château du Trignon in order to perpetuate it, while expanding it by 10 ha of Vacqueyras and a few hectares of Beaumes-de-Venise.

The vintage
The Muscat de Beaumes-de-Venise is unique in the Rhône Valley. This world-renowned natural sweet wine is made exclusively from the Muscat à petits grains grape variety. The vineyard extends over centuries-old terraces once populated by olive trees. A few are still there, who seem to ensure the flourishing of the Muscat de Beaumes-de-Venise. The AOC Vin Doux Naturel Muscat de Beaumes-de-Venise was recognized in 1945, with retroactive effect to the 1943 vintage.
Terroir
A particular geology made up of clay-sandy "blond lands" resulting from the erosion of "safre", a soft Miocene rock (-15 million years old). At the estate, we only have one 2-hectare plot, on the slopes of the Dentelles de Montmirail (southern slope) with clay-limestone soils.
In the vineyard
The grape variety is exclusively made up of Muscat with small white and black grains. The bunches are harvested manually by successive passages depending on the maturity. The grapes must have a sugar content greater than 252 g / l.
Winemaking
100% hand harvested. Grapes must have more than 525 g/L of sugar. Same vinification as for dry white wines. The mutage must be carried out during fermentation with pure alcohol with a minimum alcoholic strength of 96 degrees, when the musts contain 5 to 10% alcohol. Wines must contain a minimum of 100g / l of sugar and have a minimum acquired alcohol content of 15%.

Food pairings
Easy to drink, as an aperitif but also with desserts with fruits, almonds or chestnut. Also, do not hesitate to propose it as a chaser, to nicely end the evening.
Recipes
STRAWBERRY CHARLOTTE
You will need strawberries, 4 yogurts, 26 "biscuits cuillères", 1 packet of vanilla sugar, some agave syrup and a charlotte mould.
Start by the syrup, put a little bit of water in a pot with 2 or 3 tablespoons of agave and bring it to boil. In a containere, mix all the yogurts with the vanilla sugar. Wash and cut the strawberries and save about 10 full strawberries to decorate the charlotte. Quickly dip the biscuits into the syrup and dispose them in the bottom and on the sides of the mould. Put one yogurt preparation layer and one strawberries layer, repeat this operation twice. To finish, cover the cake with the biscuits and close the mould. Keep the charlotte about 3 hours in the fridge defore serving. Enjoy !
STRAWBERRY TART
Our homemade strawberry tart is garnished with mint and lemon cream for more flavors! The mint will enhance the freshness of the wine and the lemon will match wonderfully with citrus fruits aromas of this Muscat gifted with a nice aromatic richness. strawberries, lightly iced with honey, will embellish its fruitiness and the honey will lift the pleasant acacia honey aromas!
WHITE CHOCOLATE & COFFEE VERRINES
To realise this recipe, you will need 3 eggs, 250g of mascarpone, around 100g of sugar, white chocolate and instant coffee.
First, separate the eggs. Whisk the egg yolks with the sugar until it become foaming. Then, add the mascarpone. Separate the mix in two parts to add in one bowl the white chocolate and the instant coffee in the other. Whip the egg-whites to a light mousse. Then add it in each preparation. Keep it in the fridge until you eat it. Just before serving it, decorate it with strawberries, crushed almonds and chocolate shaving ! [+]
